Just want to share with you a simple, healthy and low-carb breakfast that doesn’t taste like cardboard:

Mozarella Omelette & Lettuce Salad with Honey Mustard Dressing

Ingredients:

2-3 eggs, egg whites only
3 low-fat baby mozzarella balls or 2 tbsp of grated mozarella
2 tbsp non-fat milk
lettuce or any salad greens
1/2 cup plain fat-free Greek yogurt (an alternative to using mayonnaise, and lowering the calories)
1/4 cup honey
1/4 cup spicy brown mustard
2 tablespoons lemon juice
salt
pepper

Easy peasy:

To make omelette:

Step 1: Mix eggs and milk in a bowl.
Step 2: Add salt and pepper and whisk
Step 3: Add olive oil in a pan on medium heat, and pour the egg mix into the pan.
Step 4: Once the omelette starts to look like it’s cooked all the way through, add the grated cheese and let the omelette cook for another minute or so – until the cheese melts.
Step 5: Fold the omelette in half

To make low-calorie honey mustard dressing:

Stir Greek yogurt, honey, mustard, and lemon juice in a bowl until evenly mixed. Store in a covered container in the refrigerator until ready to serve. Shake well.

In my effort to follow through with my New Year’s resolution of eating more veggies, I include breakfast salad in my healthy diet.

I like using romaine lettuce because they are crunchy. It’s like eating chips but healthier.

Salad dressings are probably the biggest culprit of added calories in salads. Best to use Greek yogurt and vinegarette and oil based dressing.

Drizzle only 2 tbsp of dressing in your salad. Don’t go overboard.

Breakfast is served!
