If you’re looking for an easy and super yummy cookie recipe, here’s a no-fail method:
Soft Butter Cookies
What we love about this recipe is that it’s not overly sweet. The cookies are melt-in-your-mouth and buttery. Perfect with hot cocoa, coffee or tea!
Ingredients:
8 ounces unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
1 1/2 teaspoons pure vanilla extract
1 large egg yolk
2 cups all-purpose flour
Easy peasy:
Step 1: Mix the butter, sugar, salt and vanilla and beat together until smooth and creamy.
Step 2: Mix in the egg yolk until well incorporated. Add the flour and mix just until incorporated.
Step 3: Scrape onto a lightly floured board and knead a few times, just until the dough smooths out. Don’t over knead.
Step 4: Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for several hours (I refrigerated the dough for 3 hours only) or freeze.
Step 5: Before baking, preheat the oven to 325°F. Line your baking sheets with parchment.
Step 6: Slice the dough into slices about 1/8″ thick and place them on the sheets about an inch apart. If you’re using a cookie press, form dough into small balls then press the cookie stamper half way till the pattern forms.
Tip: If you don’t have a cookie stamper or cutter, just form balls, flatten it and and use the bottom of a cylinder glass to make it a perfect circle.
Step 7: Bake until just beginning to turn golden around the edges, about 16-18 minutes.
Bake with your friends and family, it’s one way to bond during the holidays!
