Lunch Box Idea: The Easiest and Quickest Thai Chicken Curry

Lunch box meals are all about quick, easy and tasty recipes that you can make in less than 30 minutes.

Here’s another dish that I like cooking during the morning rush and is always a sure hit with Tom and Aryanna. Kayang-kaya kahit nakapikit.

Thai Chicken Curry

Ingredients:

4 chicken breasts, cubed
2 carrots, chopped
2 potatoes, chopped or 15 marble potatoes, cut in quarters
string beans or sitaw
2-3 tbsp curry paste (you can buy curry paste in a jar in leading supermarkets)
1 can of coconut milk
fresh basil leaves
2 tbsp olive oil
salt
pepper

Easy peasy:

Step 1: Heat the oil in a wok or pan set over a medium heat. Brown both sides of the chicken (you don’t have to cook it all the way though, just until the color pink of the meat has faded. It will cook more when you simmer it with the coconut milk).

Add all the vegetables to the chicken. Add salt and pepper to taste.

Tip: For even cooking, cut all the ingredients the same size. Also, cut kids’ food into bite-sized pieces for a no-fuss meal time.

Step 2: Add one can of coconut milk to the chicken and vegetables.

Tip: I like using canned coconut milk because it’s easy and thick. Powdered ones need time to mix and they usually end up using a lot of powdered coconut to make a thick mixture.

Step 3: Add 2-3 tbsp of curry paste to the mixture.

What kind of curry paste: For kids, I use Thai Green Curry Paste as they are not so spicy. Whenever I make a big batch of curry for the whole household, I just pack Aryanna’s batch then add cayenne pepper to the grown-up’s portion for some kick!

Tip: I like using curry paste because it’s more authentic. You can also control the amount of curry flavor and because the paste is more concentrated (compared to powdered ones) you use less of it.

Step 4: Swirl around the curry paste until it dilutes.

Step 5: Cover the wok or pan and simmer for 5 minutes. For thicker sauce, uncover and simmer for 2-3 more minutes. Pero malamang wala ng time mag palapot dahil nagmamadali ng umalis and mga bata. Keri ng masabaw!

Step 6: Once the chicken curry is cooked, add the fresh basil and mix it into the sauce. Langhapin ang sarap. Mmm…

Panalo na naman si mommy.

Serve this with rice or slightly grilled pita bread. Yum!!!
