Lunch Box Idea: Beef Teriyaki Yakiniku with Snow Peas

I know. It’s that time of the week again. What to pack for the kids’ and husband’s lunch?

Don’t stress. I’ve got another idea for all of you!

 Beef Teriyaki Yakiniku with Snow Peas

This recipe takes no time to cook, it’s super yummy and easy to make! The key is using sukiyaki or yakiniku (thinly sliced beef) style meats for fast cooking.

Ingredients:

250 grams sukiyaki style beef
snow peas
2 tbsp olive oil
1 large onion, sliced
1/4 cup teriyaki sauce (I recommend Kikkoman Teriyaki Marinade Honey & Soy, it’s the sweet kind of teriyaki sauce. Available in leading groceries.)
1 tbsp sesame seeds
1-2 tbsp chia seeds (optional). Read about the health benefits of chia seeds here.

Easy peasy:

Step 1: Stir fry the onions and snow peas in medium heat. Don’t overcook the veggies. It should only take a minute to cook.

Step 2: Add the beef

Step 3: Add the teriyaki sauce and season with pepper. No need for salt as the teriyaki sauce is salty enough.

Step 4: Cook the beef till brown but don’t overcook it. It takes less thank 5 minutes to cook this beef. Add the sesame seeds and chia seeds (read about the benefits of chia seeds here.)

Awesome sauce tip: If you want a thick teriyaki sauce, once the beef and veggies are cooked, remove them from the pan then continue cooking the sauce till desired consistency.

Serve with red rice (we’ve switched from eating brown rice to red rice. Red rice is rich in antioxidant, good for people who want to prioritize weight management and immune system enhancement and we like the nutty flavor too. Brown rice though has more nutrients to maintain a healthy weight and good nutrient profile.)

This is my go-to recipe when pressed for time especially during morning rush hour or last minute dinner guests. It takes 15 minutes to prep and cook this.
