Lunch Box Idea: Chicken-On-A-Stick with Peanut Sauce Dip

I tell you, anything on a stick and with dipping sauce is a sure hit with kids (and adults too!)

This is my version of Indonesian Chicken Satay. Instead of using lemongrass (which is sometimes hard to find in the grocery and not exactly a staple in our fridge), I used lemons. This recipe is super easy and cooks fast too, perfect for morning rush hour!

Chicken-On-A-Stick with Peanut Sauce Dip

Ingredients:

500 grams or 1 pack of chicken breast
store-bought peanut sauce (I buy them at Rustan’s Supermarket)

For the marinade:

1/4 cup light soy sauce
1-2 tbsp chopped garlic
1 tbsp chopped ginger
1 fresh lemon juice
1 tbsp fish sauce
1-2 tbsp honey
ground pepper
cayenne pepper (optional)
2 tbsp olive oil

Easy peasy:

Step 1: Cut the chicken 1/4 inch (1/2 cm) chunks. Thread these strips onto bamboo skewers (I used short skewers), about 3 or 4 strips per skewer.

Step 2: I use the 9-Minute Marinator to marinade my chicken but you can also arrange the skewers in a glass baking dish.

Marinade the chicken at least for 30 minutes in the fridge but best overnight.

Step 3: For indoor barbecues, lightly oil the pan and set stove for medium heat.

Step 4: Cook the chicken on both sides. Don’t overcook the chicken. It only takes 2-5 minutes to cook both sides.

Tip: Heat up the peanut dipping sauce (I buy it at Rustan’s or The Landmark groceries) before packing or before serving to guests.

This meal is great as a lunch box meal or for picnics!

Tip: You can also brush the peanut sauce onto the cooked chicken and then pack in the lunch box. Although, kids prefer to have the sauce on the side as it’s more fun to dip the chicken.
