Korean food is probably one of my favorite dishes. I love the mix of salty, sweet and spicy. To stay on my healthy diet, I made a Korean kimchi fried rice hack that has same savory and spicy taste with less calories and more nutritious.
Kimchi Fried Quinoa
Ingredients:
1/2 cup kimchi
1 cup cooked quinoa
1 onion, sliced
3 cloves of garlic, chopped
2 tbsps olive oil
Sriracha or hot sauce
fresh parsley for garnish
Optional: 100 grams thinly sliced beef; 2 tbsps teriyaki sauce; 1 poached egg
Step 1: To cook basic quinoa recipe, click here.
Step 2: Sauté the kimchi in garlic and onion
Step 3: Once the kimchi is brown, add the quinoa
Step 4: Add sriracha to the rice mix (the kimchi is not as spicy once you cook it so if you want a bit of heat, add the hot sauce.)
Step 5: Serve with a smile! 🙂
Optional:
Cook the thinly sliced beef in olive oil and add the teriyaki sauce. The season with salt and pepper
Top the rice and beef with a poached egg and garnish with freshly chopped parsley.
