Tom and I pride ourselves in making killer pancakes. Friends and family who have tried our flapjacks can attest to how good they are. However, it takes precision (using our own secret recipe) and time to make them and sometimes, our children don’t have the patience to wait for our perfect hot cakes especially during school days when they’re in a rush to have breakfast #agadagad.
If I can’t make our griddle cakes, I should at least make the perfect (and quick and easy) pancake in a cup by just using a store bought boxed pancake and cook it in the microwave.
Here’s an easiest and quieckest recipe that will save parents from pulling out their hair in the morning:
Microwave Pancake In A Cup
Ingredients:
1 small boxed pancake of your choice (I usually buy the ones that I just have to add water and no egg required)
1 tsp butter
chocolate chips and/or peanut butter chips (optional)
maple syrup
Easy peasy:
Step 1: Prepare the pancake batter according to the instructions in the box.
Step 2: Butter the cup/mug all the way to the rim
Step 3: Pour the batter in a mug/cup
Step 4: Top the hotcake mix with choco chips
Step 5: Pop it in the microwave for 90 seconds or so, depending on the strength of your appliance.
Step 6: Drizzle some maple syrup and if this doesn’t make your jaw drop…
Step 7: Observe the pancake perfection and then serve it with a smile! 🙂
