Healthy, Yummy & Low-Calorie Cauliflower Truffle Mash

Mash Cauliflower is a wonderfully easy and nutritious dish. Not only does it have less calories and low-carb, the benefits include a healthy dose of fiber (over 2.5 grams per 1 cup), B6, vitamins C and K, folate and manganese. It also contains omega-3 fatty acids.

We all have our comfort food cravings. I usually carb binge on mash potatoes. Unfortunately, the calories of the creamy taters’ are off the charts!

Since I’m on a healthy diet, I’m ditching the high-calorie meals. Fortunately, by making a simple substitution, I can still enjoy a similar taste & texture with a much lower calorie price – using cauliflower.

Truffle Cauliflower Mash

Ingredients:

1 cup of cauliflower (fresh or frozen)
1 tbsp unsalted butter or you can also substitute it with olive oil
1 tbsp grated mozarella or any low-fat cheese
Truffle salt (you can also use 1/2 tsp truffle oil) and pepper to taste
Fresh parsley, chopped

Easy peasy:

Step 1: Steam the cauliflower till soft
Step 2: In a separate bowl, mash the cauliflower or put it in a blender or food processor
Step 3: Add butter and cheese
Step 4: Season with truffle salt (or truffle oil) and pepper
Step 5: Garnish with chopped, fresh parsley

You will love this mash potato hack! If you follow my recipe, a cup of Cauliflower Mash is around 60-70 calories (without milk, extra calories, or carbs). It’s so easy to make and tastes good! Kids would love this recipe too.

You can also add roasted garlic or drizzle a little bit of roasted sesame oil for flavor.
