How’s everyone? To those who are regular Holy Week “staycationers” like me, I’m sure you’ve been enjoying traffic-free Manila. My family and I have been busy cleaning up and preparing for our big move. We’ve been going back and forth from our condo to the new house and loving the stress-free drive. It’s a virtual ghost town! Yaaaaaaaas!
If you have no desire to hit the malls or the grocery and just want to cook something simple yet special for your friends and family, allow me to share with you an Easter treat:
Bite-sized Cheddar & Chives Frittata
Ingredients:
6 fresh eggs
1/4 cup milk (not in photo because Dylan swiped it off the tray while my back was turned, haha)
1/4 cup grated cheddar cheese
3-4 sprigs of fresh chives or spring onions, finely chopped (I use a pair of scissors for easy cutting)
2 tbsp butter (melt 1 tbsp of butter for the mixture and the other half is to be used to grease the muffin tins)
salt
pepper
Special equipment: mini-muffin tin or as what Aryanna and I call it “puto pan”. If you don’t have the mini tins, the regular muffin pan or individual ramekins will do.
Easy peasy:
Step 1: Preheat oven to 375 degrees
Step 2: In a large bowl (I use a large measuring cup for easy pouring), combine the eggs, milk, cheddar cheese, melted butter chives, salt and pepper and whisk them to submission.
Step 3: Grease the pan with the leftover soft butter. Fill the cups of the prepared muffin tin 3/4 full with the egg mixture. Bake until the frittatas are puffed up and just set in the center, 8 to 10 minutes.
Step 4: Serve with a smile!:)
These bite-sized frittatas are yummy! It’s also a fun way to serve eggs. My kids don’t like eating eggs that much but they pop these goodies like mini cupcakes!
Easter brings new hope. Moving to our new house is an exciting time for my me and my family and we’re looking forward to our new life in our new space and making new memories. I’m hoping for a smooth transition. Tom and I will have a better idea on the condition of the house this coming week when the contractors have emerged from the dead (a.k.a. Easter vacation). LOL
