Crispy Tortilla Pizza

Since Tom and Aryanna are on vacation in Italy, cooking for my son and myself has been easier. We kinda like the same food and unlike Tom and Aryanna who both have a sweet-tooth, Dylan and I have salty-tooth.

We both snack on anything crunchy and crispy and one of our favorite meals is tortilla pizza! It’s soooo easy to make and nutritious especially when made with fresh veggies (I used tomatoes, basil and some low-fat cottage cheese for this recipe). It also takes only less than 10 minutes to prep and cook.

Try this recipe for the whole family and you can personalize your toppings too!

Crispy Tortilla Pizza

Ingredients:

Small wheat or flour tortilla
2 tbsp. t0mato sauce or tomato ketchup (not banana ketchup)
Fresh tomatoes, chopped
2 tbsp. cottage cheese or shredded mozarella cheese
Fresh basil leaves
Extra virgin olive oil (for drizzling)
Salt
Pepper

Easy peasy:

Step 1: Before you top the tortilla with ingredients, turn on your stove top and using a thong, heat up the tortilla on both sides over the open fire. This is my secret in making the tortilla crust extra crispy and cook fast!

Step 2: Spread the tomato sauce or ketchup over the tortilla evenly, then top it with fresh tomatoes. Sprinkle the cottage cheese all over the tortilla then season it with salt and pepper and drizzle olive oil.

Step 3: Turn on the broiler or oven and put the tortilla pizza on a baking sheet. Cook the pizza until cheese is slightly melted. Rotate the pizza to cook evenly. You can also use an oven toaster.

Step 4: Slice the pizza while it’s hot

Step 5: Observe the string cheese action then proceed to devouring it. LOL
