Holy Week = Meatless meals

Here’s a one of our favorite brunch meals that’s easy to make and yummy, plus using only some basic ingredients:

Martha Stewart’s “Perfect Popovers”

I’ve already posted this popover recipe I got from Martha Stewart‘s website in my previous blog, but for the sake of my new readers, I’m reposting it again.

Ingredients:

  • 1 tablespoon unsalted butter, melted, plus more for greasing tin
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups milk

 

Easy peasy:

  1. Preheat oven to 450 degrees. Lightly grease and flour a popover tin.
  2. In a large bowl, whisk together flour and salt. In a separate medium bowl, whisk together eggs, milk, and 1 tablespoon melted butter. Pour over flour mixture, and fold until just blended.
  3. Fill the popover cups two-thirds to three-quarters full.
  4. Transfer tin to oven, and bake for 15 minutes. Reduce the temperature to 350 degrees, and bake until well browned and crusty, about 20 minutes. Remove popovers from the oven, and unmold onto a rack. Puncture the sides with a sharp knife to let steam escape, and serve immediately.

 

Tip: Don’t over mix the batter. I saw Martha Stewart make this on her show and she hardly mixed the batter. Mine even had big lumps when I poured in the popover pans. By doing so, it makes the popovers lighter.

Tip: If you don’t have popover pans, you can use muffin pans.

Tip: You can have jam or butter or cream cheese with the popovers.

This table setting is inspired by Palm Sunday. In other words, “palaspas” ang peg! Haha!

  1. I love popovers and Martha’s recipe. I bought my popover pan from Sur La Table many years ago and I still have it. You can also try Paula Deen’s popover recipe from foodnetwork.com. Enjoy! =)
