Argentina Corned Beef Rolls, 2 Ways

Spring rolls and omelette rolls could be yummy appetizers or tasty snacks plus, they’re easy to make and you can prepare them ahead of time.

Here are my versions of the lumpia:

Argentina Corned Beef Fried Spring Rolls

Ingredients:

Argentina Corned Beef

1/2 a head of cabbage, Julienne
1 carrot, Julienne
spring onions
lumpia wrappers
extra virgin olive oil

Easy peasy:

Step 1: Cook the Argentina Corned Beef

Step 2: Make the filling for the spring rolls using Argentina Corned Beef, carrots, cabbage and spring onions in lumpia wrapper

Step 3: Wrap the lumpia

Step 4: Deep fry the lumpia in hot oil

Step 5: Place the fried spring rolls on a paper napkin lined plate to absorb the excess oil.

Plating:

Serve with spicy vinegar

I love the crunchy texture of the fried spring roll wrapper and the veggies!

Argentina Corned Beef Omelette Rolls

You can serve this for breakfast or merienda!

Ingredients:

Argentina Corned Beef

2-4 eggs (2 eggs make 2 thin omelettes)
2 tbsp non-fat milk
salt
pepper

Kesong Puti and spring onions

Easy peasy:

Step 1: Cook the Argentina Corned Beef

Step 2: Beat together 2 eggs. Add the spring onions.

Step 3: Heat the extra virgin olive oil in a non-stick frying pan set over a low to medium heat.

Step 4: Cook thin layers of omelette one at a time.

Step 5: Set aside to cool

Step 6: Add the cooked Argentina Corned Beef and kesong puti filling to the omelette. Roll it up.

Plating:

Serve with a smile! 😀
